Home Canned Tomato Juice is an easy dinner. Made with 1 1/2 to 2 pecks tomatoes, scald, peel and quarter, 1/4 c. sugar, 1/2 c. white vinegar, 7 tsp. salt and canning jars, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

After tomatoes are quartered, cook for 5 to 10 minutes longer. Press through sieve.
Measure 7-quarts juice.
Add sugar, vinegar and salt to juice.
Mix well and pour into sterilized jars.
Seal. Process in pressure cooker for 10 minutes at 5 pounds pressure.
