Herbed Tomato Soup
Herbed Tomato Soup is an moderately easy dinner. Made with 1/2 c. sliced onion, 2 tbsp. butter, 2 c. chopped tomatoes, 1 1/2 c. chicken broth and 1 (8 oz.) tomato sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook onion and butter until tender.
Add tomatoes, broth, tomato sauce, basil, thyme and pepper.
Bring to a boil and reduce heat.
Cover and simmer for 30 minutes.
Cool slightly.
Place 1/2 of mixture at a time in blender; blend until smooth.
Return mixture to saucepan and heat thoroughly.
Garnish with lemon slices.
