Helen's Zucchini Bread
Helen'S Zucchini Bread is an moderately easy dinner. Made with 3 eggs, lightly beaten, 1 c. salad oil, 1 c. sugar, 2 c. zucchini, grated and drained and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix first 5 ingredients.
Stir together dry ingredients. Combine with zucchini mixture.
Add raisins and nuts.
Bake in 2 well-greased loaf pans at 350Β° for about 1 hour.
Cool 10 minutes. Remove from pan.
You may substitute 1/2 cup coarse bran for 1/2 of the flour, if desired.
