Heavenly Rice Pudding
Heavenly Rice Pudding is an moderately easy dinner. Made with 1 1/2 c. cold cooked rice, 1 1/2 c. small marshmallows, 1/2 c. crushed pineapple, well drained, 1/4 c. chopped maraschino cherries, drained and 1/4 c. chopped pecans, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix rice, marshmallows, pineapple, cherries and nuts in a bowl.
Chill the evaporated milk in freezer tray until soft ice forms around edges (about 15 or 20 minutes).
Then whip it until stiff, 1 minute.
Add lemon juice; whip 2 more minutes until very stiff.
Beat in sugar.
Fold into rice mixture.
Spoon into serving dishes.
Makes 6 servings.
