Health Relish
Health Relish is an moderately easy dinner. Made with 1 c. diced cucumber, peeled and seeded (if necessary), 3 c. cabbage, finely chopped, 1 bell pepper, seeded and diced (can use green, red or yellow), 2 carrots, grated and 1 1/3 c. diced onions, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix cucumber, cabbage, pepper and carrots in bowl.
Blend well.
Set aside.
Place mustard seed, celery seed, salt, pepper, vinegar and sugar.
Heat all until warmed, just until sugar dissolved.
Set aside to cool.
Pour over vegetables and blend well.
Makes about 6 cups.
Refrigerate 2 or 3 hours.
