Harvard Beets
Harvard Beets is an moderately easy dinner. Made with 2 c. diced beets, 2 tbsp. sugar, 1 tbsp. cornstarch, 1/4 tsp. salt and 1/4 c. vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain beets; save water.
In saucepan, combine sugar, cornstarch and salt.
Stir in reserved beet liquid, vinegar and butter.
Cook and stir until mixture thickens.
Add beets and heat through.
Serves 4.
