Happy Hour Mushrooms
Happy Hour Mushrooms is an moderately easy dinner. Made with 10 medium size mushrooms, 6 tbsp. margarine, softened, 1 clove garlic, minced, 3 tbsp. shredded jack cheese and 2 tbsp. dry white or red wine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove stems from mushrooms.
Melt 2 tablespoons of margarine, brush over mushroom caps, coating thoroughly.
Stir together remaining margarine, garlic and cheese until well blended.
Stir in wine, soy and crumbs until well blended.
Place mushrooms cavity side up, on a large rimmed baking dish.
Evenly mound filling in each mushroom.
Broil about 6 inches below broiler until bubbly and lightly browned (about 3 minutes).
Serve warm.
Makes 10 appetizers.
