Cut chicken up your way.
Salt and pepper all pieces.
Mix together eggs, mustard and milk.
Dust chicken in salt, pepper and flour mixture, then put into egg mixture, then roll in flour mixture.
In a heavy iron skillet, pour about 1 to 1 1/2 inches of oil.
Heat to 325° to 350°.
Fry a few pieces at a time until golden brown, about 7 to 10 minutes.
