Guacamole
Guacamole is an moderately easy dinner. Made with 2 firm ripe avocados, 3/4 c. finely chopped red onion, juice from 1 lime, 1 c. peeled, seeded and cubed ripe tomato and 3 pickled serrano chilies or green hot chilies, finely chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Peel avocados and remove seeds.
Cut lengthwise into slices. Finely dice slices to make about 3 cups.
Put 1 cup cubed avocado, 1/2 cup onion and half of lime juice into blender and purΓ©e. Scrape into bowl and add remaining avocado, chopped onion, tomato and chopped chilies.
Add more lime juice if desired.
Add salt and pepper to taste.
Stir to blend.
Yields 4 to 6 servings.
