Green Tomato Pickles
Green Tomato Pickles is an moderately easy dinner. Made with 2 gal. green tomatoes, sliced, 8 large onions, chopped, 1 to 2 c. hot peppers, chopped, 3 to 4 bell peppers, sliced and 1/2 c. canning salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix tomatoes, onion, hot peppers and bell peppers in large container and sprinkle with salt.
Cover with ice.
Let stand 1 hour, then drain.
Mix vinegar and sugar in large pan.
Add drained tomato mixture.
Bring to a boil.
Fill hot jars and seal.
Do not cook.
Add spices, if desired.
Very good in about 2 weeks.
