Green Tomato Pickles
Green Tomato Pickles is an moderately easy dinner. Made with 4 lb. green tomatoes, 2 c. lime, 4 gal. water, 1 qt. vinegar and 1 tbsp. mixed pickling spices, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Soak tomatoes 24 hours in lime solution.
Rinse well at least 4 times.
Combine vinegar, spices, sugar, and salt; add tomatoes and cook for 30 minutes.
Remove tomatoes from the mixture. Continue to cook the mixture until it becomes a thick syrup. Pack tomatoes into sterilized jar; pour hot syrup over and seal immediately.
