Green Rice
Green Rice is an moderately easy dinner. Made with 2 c. uncooked rice or 4 c. minute rice, 1/2 to 1 lb. grated cheddar cheese, 1 c. bell pepper, chopped, 1 small can green chilies and 1 c. chopped parsley, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Cook rice. While rice is still hot, add the cheese. Mix well. Add the bell pepper, chilies, parsley, garlic and onion.
Fold in the milk, oil, salt and pepper. Put in lightly oiled casserole and bake for 1 hour.
