Green Chile And Artichoke Dip(Serves 15) is an moderately easy dinner. Made with 1 (4 oz.) jar pimentos, drained and chopped, 1 1/2 c. mayonnaise, 2 (7oz.) cans green chiles, drained and diced, 1 (14 oz.) can artichoke hearts, drained and coarsely chopped and 1 (4 oz.) pkg. monterey jack cheese, grated, this recipe delivers authentic, satisfying flavors. Preheat oven to 350°.
Drain the pimentos.
In a mixing bowl combine the first six ingredients.
Mix well.
Spread mixture into a shallow baking dish.
Sprinkle with additional Parmesan cheese. At this point the dip may be stored in the refrigerator for baking at a later time.
Bake uncovered in a preheated oven 350° for 30 minutes or until bubbling.
