Greek Vegetable Salad is an moderately easy dinner. Made with 1 pkg. frozen mixed vegetables, 2 medium potatoes, boiled, 3 to 4 eggs, boiled, green and black olives and capers, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Have all the vegetables cooked and seasoned.
Cut into small pieces (diced).
Save the 1 egg for garnish.
Also dice the shrimp or the cold cuts.
Mix all with 1/2 cup mayonnaise.
Put in a serving dish.
Cover with additional mayonnaise, forming a round or oblong shape.
Decorate and garnish with sliced eggs, capers, olives, beet slices, etc.
Let your imagination be your guide.
I like to use homemade mayonnaise for this salad.
