Greek Style Rockfish
Greek Style Rockfish is an moderately easy dinner. Made with 2 (10 oz.) rockfish filets, 1 1/2 to 2 tbsp. olive oil, 1 tsp. garlic, crushed, 1/2 each: red and green pepper, julienned and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Put filets on greased sheet pan.
In saute pan, saute olive oil, garlic, peppers and onion.
Pour on top of filets.
Sprinkle oregano, then Feta cheese, then olives on top.
Bake at 350Β° for 10 minutes per inch thickness.
