Greek Pasta Salad
Greek Pasta Salad is an moderately easy dinner. Made with 1/2 lb. extra lean ground beef, 1/3 c. chopped fresh mint or 2 tbsp. dried leaf mint, 1 garlic clove, minced, 1 3/4 c. (6 oz.) small shell macaroni, cooked and 10 cherry tomatoes, quartered, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Brown ground beef in a medium skillet.
Drain.
Add mint and garlic; cook 2 minutes, stirring constantly.
Spoon ground beef mixture into a large bowl.
Stir in pasta, tomatoes, cheese, red bell pepper and onion.
Add dressing and lemon juice; toss lightly.
Season with salt and pepper.
Serve on lettuce-covered salad plates.
