Greek Lemon Soup
Greek Lemon Soup is an easy dinner. Made with 4 c. strained well seasoned chicken stock, 1/4 c. uncooked rice, 3 eggs, juice of 1 medium lemon and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat stock in saucepan.
Add rice.
Cover and simmer until rice is tender, about 25 minutes.
Beat eggs, lemon juice and 1/2 cup hot stock.
Season; serve.
