Mix all ingredients together.
Let stand, covered with a cloth, until it is bubbly.
Take out 2 to 3 big mixing spoons and place in clean jar with loose fitting lid; store in refrigerator.
This is the starter and will be used in place of yeast.
Add 1/2 or 2/3 cup shortening or bacon grease; add flour until stiff.
Grease bowl and place dough in it and grease top of bread dough.
Cover with a clean cloth.
Let rise double in size.
Punch down and let rise again.
Form into loaves and let rise.
Makes 2 loaves.
Bake at 350Β° for 30 minutes.
I like to divide the sponge after the starter is out and put an egg, milk, spices, raisins and make some sweet rolls as well as regular bread.
