Gold Cake
Gold Cake is an moderately easy dinner. Made with 2 3/4 c. sifted swans down cake flour, 1/2 tsp. salt, 3/4 c. butter, 3/4 c. milk and 2 3/4 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sift flour once; measure.
Add baking powder and salt and sift together 3 times.
Cream butter thoroughly.
Add sugar gradually and cream together until light and fluffy.
Beat egg yolks thoroughly until light colored and thick enough to fall from the beater in a heavy continuous stream.
Add to creamed mixture and beat until smooth, almost waxy in appearance.
Add flour alternately after each addition.
When all flour is added, beat thoroughly again.
Add lemon extract.
Bake in 3 greased 9-inch layer pans in moderate oven at 375Β° for about twenty minutes or until tops spring back.
Frost with any icing you choose.
