Gold and Green Casserole
Gold And Green Casserole is an moderately easy dinner. Made with 2 lb. medium size zucchini (4), 1/2 tsp. salt, 1/2 c. water, 2 eggs, beaten and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash zucchini, slice off ends; slice into 1/4 pieces, boil in salted water, about 10 minutes or until tender.
Drain and mash. Drain again; mix eggs, salt, pepper and onion.
Combine zucchini with egg mixture, corn and 1/2 the cheese.
Pour into oiled or greased 2-quart casserole.
Top with remaining cheese.
Bake at 350Β° for 30 to 40 minutes or until set.
