Goforth'S Chicken And Rice is an moderately easy dinner. Made with 1 1/2 c. long grain rice (not minute rice), 3 c. cold water, 3 boneless, skinless chicken breasts, 3 tbsp. oil and 1 stick margarine, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine rice and water in a heavy 2 to 3-quart cooking container.

Bring to hard boil in uncovered container.

Lower heat and cover with tight fitting lid.

Simmer for 20 minutes.

Do not remove lid or stir rice while cooking! While rice is cooking, heat oil in large skillet.

Cut chicken into short, thin strips and stir-fry in oil until done.

When rice is done, add chicken, margarine, salt and pepper, gently stirring to combine.

Serve with tossed salad and cantaloupe.

This is one of our family's favorite dishes.
