Gingered Shrimp
Gingered Shrimp is an moderately easy dinner. Made with 1 tbsp. vegetable oil, 1 tbsp. grated fresh ginger, 1 lb. medium shrimp, peeled, 1 (20 oz.) can pineapple chunks, drained (save juice) and 4 oz. fresh or 1 (6 oz.) pkg. frozen snow peas, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In wok over medium-high heat, heat oil 1 minute.
Add ginger; cook 1 minute.
Add shrimp and cook 4 minutes.
With slotted spoon, remove shrimp; set aside.
Add pineapple, snow peas and pepper to wok.
Cook 1 minute; in measuring cup, stir pineapple juice, cornstarch, vinegar, sugar and salt until smooth.
Add to wok.
Bring to a boil.
Add shrimp.
Cook 3 minutes until sauce thickens.
