Ginger Cookies
Ginger Cookies is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. margarine or butter, softened, 1/2 c. molasses, 2 eggs and 4 1/2 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large bowl beat sugar, margarine, molasses and eggs until light and fluffy.
Lightly spoon flour into measuring cup; level off.
Stir in flour, baking soda, salt, cinnamon, cloves, ginger and nutmeg; mix well.
Heat oven to 350°.
Shape dough into 1-inch balls; roll in sugar.
Place 2 inches apart on ungreased cookie sheets.
Bake at 350° for 8 to 12 minutes or until set.
Cookies will puff up and flatten during baking.
Cool 1 minute; remove from cookie sheets.
