German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 7 medium-size red potatoes (about 2 pounds), 1/4 c. boiling water, 3 tbsp. salad vinegar, 1/4 tsp. salt and 3 slices bacon, cooked and crumbled, this recipe delivers authentic, satisfying flavors. Cook potatoes in boiling water to cover 25 minutes or until tender.
Drain and cool slightly.
Peel potatoes and cut into 1/4-inch slices.
Combine potatoes and onion in a large bowl; set aside.
Dissolve bouillon granules in boiling water; stir in vinegar (I use red wine vinegar), oil (I use olive oil), salt and pepper.
Pour over potato mixture and toss gently.
Keep potato slices separated as you are tossing so that each slice will be coated with oil and vinegar mixture.
Sprinkle top with crumbled bacon.
Makes 8 servings.
