German Potato Salad
This German Potato Salad uses warm sliced potatoes, bacon, onion, sugar, flour, beef bouillon, vinegar, water, and optional allspice. The hot dressing is boiled until smooth, then tossed gently with potatoes and bacon.
Cook unpeeled potatoes.
In frypan, fry bacon until crisp. Drain on paper towels, reserving 3 tablespoons drippings.
Crumble bacon.
To reserve drippings, add onion.
Cook until tender.
Add sugar, flour, bouillon and spices.
Stir until smooth.
Stir in vinegar and water; bring to boil.
Peel warm potatoes.
Slice and add to sauce mixture with bacon.
Toss lightly to coat.
Serve warm.
Makes 4 to 5 servings.
