Georgia Squash Casserole
Georgia Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced (6 c.), 1/4 c. chopped onion, 1 can cream of chicken soup or cream of mushroom soup, undiluted, 1 c. sour cream and 1 c. shredded carrot, this recipe delivers authentic, satisfying flavors. Cook squash and onion in boiling salted water, 5 minutes. Drain well.
Combine soup, sour cream and carrots and fold into squash-onion mix.
Combine stuffing mix and margarine.
Spread half of stuffing mix in bottom of 12 x 7 x 2-inch casserole.
Spoon vegetable mix over and top with remaining stuffing mix.
Bake at 350Β° for 30 minutes.
