Garden Zucchini Pie
Garden Zucchini Pie is an impressive dinner. Made with 3 c. refrigerated, loose-pack hash brown potatoes or 5 medium potatoes, 1 beaten egg, 1/4 c. finely chopped onion, 1/4 c. grated parmesan cheese and 2 medium zucchini, thinly sliced (2 1/2 c.), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

If using whole potatoes, wash and peel.
In a food processor, fitted with a medium shredding disc, coarsely shred the potatoes. Or you can shred potato with a grater.
To prevent darkening, place shredded potatoes in a bowl of cold water immediately after shredding.
Rinse potato shreds well and drain.
Squeeze potato shreds to remove any excess water.
