Fruit Salad
Fruit Salad is an moderately easy dinner. Made with 1 large apple, diced (larger pieces with peeling on), 1 banana, sliced, 2 tbsp. lemon juice, 1 can mandarin orange segments, drained and 1 can fruit cocktail, drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large bowl, combine apple and banana with lemon juice.
Add canned fruits and marshmallows.
In saucepan, combine eggs, sugar, cornstarch and fruit juice.
Cook over medium heat until thick, stirring constantly.
Remove from heat and cool.
Toss lightly with fruit.
Fold in whipped topping.
Cover and chill at least 3 hours.
