Frozen Waldorf Salad
Frozen Waldorf Salad is an moderately easy dinner. Made with 1 (9 oz.) can crushed pineapple, drained well (reserve juice), 1/2 c. sugar, 2 1/2 c. diced apple, 1/2 c. chilled whipped cream and 1/2 c. diced celery, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Mix together drained pineapple, apples, celery and nuts.
In saucepan, mix eggs, sugar, lemon juice, salt and pineapple juice. Cook over low heat, stirring constantly until slightly thickened. Cool.
In chilled bowl, beat whipppig cream until piles softly. Fold into cooled egg mixture.
Pour over fruit mixture and toss slightly.
Turn into an 8 x 8 x 2-inch pan and freeze.
Allow salad to slightly thaw for serving.
