Frozen Strawberry Meringue
Frozen Strawberry Meringue is an easy dinner. Made with 2 c. strawberries, rinsed and crushed, 3 egg whites, 1/2 c. granulated sugar, powdered sugar or honey and mint sprigs for garnish, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In the large bowl of an electric mixer, beat egg whites on medium speed until they hold soft moist peaks.
Add sugar, about 1 tablespoon at a time, and beating constantly until meringue is thick and glossy.
Add 1 cup of crushed strawberries.
Beat on medium speed just to blend.
Transfer meringue mixture to a freezer container.
Cover well.
Freeze at least 1 hour until solid.
Serve and put berries on top.
