Fried Zucchini
Fried Zucchini is an moderately easy dinner. Made with 1 c. pancake mix, 2 tbsp. vinegar, milk (enough to make a fairly thick batter), salt to taste and 1 to 2 large zucchini, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel zucchini and slice into about 1/4-inch slices.
Sprinkle individual slices with salt to your liking.
Heat oil for deep frying.
Mix pancake mix, vinegar and milk.
Dip each zucchini slice in batter and place in hot oil.
Fry until brown (about 1 to 2 minutes).
Better if you only fry about 4 or 5 at a time.
Do not overcrowd fryer.
Drain on paper towels.
