Fried Squash Fritters
Fried Squash Fritters is an moderately easy dinner. Made with 2 or 3 yellow squash, 1/2 small onion, 1 egg, 3 or 4 tbsp. flour and cooking oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash and cut ends off of 2 or 3 yellow squash and slice.
Put in boiler, add salt, pepper and water and cook until tender. Drain and mash like mash potatoes.
Add onion, egg and enough flour to mixture, so it will be firm enough to spoon by spoonfuls into hot oil and fry until golden brown.
Makes enough for approximately 3 people.
