Fried Rice
This Chinese fried rice is a second wok version with shrimp, egg, scallion, peas, carrots, and separate grains kissed by soy and sesame. High heat keeps it dry, smoky, and different from a soft rice pilaf.

Pat shrimp dry and quickly sear them in a hot wok, then set aside.
Scramble eggs in oil and break cold rice into loose grains.
Stir-fry rice over high heat with peas, carrots, soy sauce, and white pepper until smoky.
Return shrimp and egg, toss with scallions and sesame oil, and serve immediately.
