Fried Rice
Fried Rice is an moderately easy dinner. Made with 1 small onion, chopped (1/4 c.), 2 tbsp. chopped green pepper, 2 tbsp. vegetable oil, 2 c. cooked rice and 1 can (8 1/2 oz.) water chestnuts, drained and thinly sliced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook and stir onion and green pepper in oil in 10-inch skillet until onion is tender, about 3 minutes.
Stir in rice, water chestnuts, mushrooms and soy sauce. Cook over low heat, stirring frequently 5 to 7 minutes.
Stir in eggs; cook and stir until eggs are done, 4 to 5 minutes longer.
Yields 4 to 5 servings.
