Fresh Peach Pie
Fresh Peach Pie is an moderately easy dinner. Made with 2 (8-inch) pastry crusts, 4 c. sliced fresh peaches (about 7 medium-sized peaches), 1 tsp. lemon juice, 2/3 c. sugar and 3 tbsp. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oven to 425Β°.
Prepare pastry.
Mix peaches and lemon juice.
Stir together sugar, flour and cinnamon; mix with peaches. Pour into pastry-lined pie pan; dot with butter.
Cover with top crust which has slits cut in it; seal and flute around edges. Cover edge with 2 to 3-inch strip of aluminum foil to prevent excessive browning; remove foil the last 15 minutes of baking. Bake pie for 35 to 45 minutes.
