Fresh Apple Cake With Cream Cheese Icing is an impressive dinner. Made with 4 c. apples, diced, 2 c. sugar, 1 c. salad oil, 2 eggs, well beaten and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine sugar, oil, eggs and vanilla; add the apples. Sift together flour, soda, cinnamon and salt; add to apple mixture. Mix thoroughly (batter will be thick). Add nuts and mix again.
Pour into greased and floured 8 x 8-inch square pan, loaf pan or Bundt pan. Bake 90 minutes at 325Β°. Test cake with toothpick.
(Can add 3/4 cup raisins, if desired.)
