Forgotten Soufflé
Forgotten Soufflé is an moderately easy dinner. Made with 8 to 10 slices white bread, cubed (no crust), 3 c. grated cheddar, 2 c. broccoli flowerets, 1/2 c. chopped onion or chopped red or green pepper or 1 c. mushrooms, all sauteed in 1 to 2 tbsp. butter and 2 c. precooked ham, cubed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Grease a 9 x 13 x 2 1/2-inch casserole.
Cover bottom with 2/3 of the bread cubes.
Sprinkle on half the cheese. Cover with ham, vegetables, remaining bread and cheese.
Beat eggs. Add milk, salt and pepper; mix.
Pour over mixture in casserole. Cover and refrigerate overnight.
Bake at 350° for 35 to 40 minutes.
Cover with foil during the last part to avoid browning.
Serves 8 to 10.
