Beat potatoes with electric mixer.
Add cheese, onion, flour, salt and pepper.
Beat at medium speed until blended, then at high speed until light and fluffy.
Spoon into a 9-inch baking dish (1 1/2-quart).
Put onion rings on top just before baking.
Bake, uncovered, at 300Β° for 35 minutes.
Cover the last 10 minutes.
