Fluffy Gingerbread
Fluffy Gingerbread is an moderately easy dinner. Made with 2 c. sifted flour, 1/2 tsp. salt, 1 tsp. cinnamon, 1/2 c. butter and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Sift flour once, measure and add soda, salt and spices and sift 3 times.
Work butter with spoon until creamy.
Add sugar gradually, beating after each addition until light and fluffy.
Add eggs.
Add 1/4 of flour and blend.
Add molasses and beat until smooth.
Add remaining flour and beat well.
Add boiling water and stir until blended.
Turn into greased 10 x 13-inch pan and bake in moderate 350Β° oven for 45 minutes.
After cool, may be iced with buttercream frosting, if desired.
