Florida Orange Meringue Pie
Florida Orange Meringue Pie is an moderately easy dinner. Made with 1 c. orange juice, 2 tsp. grated orange rind, 1 c. sugar, 3 egg yolks, beaten and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine juice, orange sections, rind, sugar and cornstarch over medium heat, stirring constantly until it comes to a boil.
Cook 2 minutes. Remove and add small amount slowly to the 3 beaten egg yolks. Return to stove and cook 2 more minutes.
Remove from heat, add lemon juice and butter; let cool.
Pour in baked pie shell. Top with meringue; bake until done.
