Fish Fillets
Fish Fillets is an impressive dinner. Made with 2 lb. frozen cod or halibut fillets, 1 c. chicken broth, 1/4 c. olive oil, 1/4 c. lemon juice and 1 bay leaf, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut fish into 4 to 6 portions, and put into shallow buttered casserole dish.
Mix the next 6 ingredients and pour over fish.
Let stand until fish is thawed.
When ready to bake, top each piece of fish with 1 onion slice and 1 tomato slice.
Sprinkle over top, a mixture of corn flake crumbs and parmesan cheese.
Dot with butter.
Bake at 350 degrees for 25 to 30 minutes, or until top is a golden brown.
Serve with sauce from pan.
