Fish Chowder
Fish Chowder is an moderately easy dinner. Made with 1 c. water, 1 c. diced potatoes, 3 slices salt pork, chopped, 1 medium onion, chopped and 3/4 lb. white fish fillets (such as haddock or cod), cubed, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bring water to a boil in a Dutch oven.
Add potatoes.
Cover and cook 10 minutes.
Fry salt pork until transparent.
Add onion and cook until onion is soft and salt pork is lightly browned. Add salt pork, drippings, fish fillets, thyme and marjoram to potatoes.
Simmer 10 minutes or until potatoes are tender.
Stir in half and half, salt and pepper; simmer 5 minutes.
Sprinkle with parsley.
Yields 3 1/2 cups.
