Finnish Rye Cookies
Finnish Rye Cookies is an easy dinner. Made with 1/2 c. butter or margarine, softened, 1/3 c. sugar, 1 to 1 1/2 c. rye flour, 1 egg, beaten and 1/2 c. flour (all-purpose), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oven to 400Β°.
Beat butter and sugar until light and fluffy.
Stir in rye and all-purpose flours.
Mix in egg.
Work dough to 1/8-inch thickness on light floured cloth covered board. Cut into 2-inch circles.
Place cookies 1 inch apart on greased baking sheets.
Cut hole slightly off center with small bottle cap or thimble.
Prick entire cookie with a fork.
Bake until light brown, 5 to 7 minutes.
Cool on wire racks.
Makes about 3 1/2 dozen cookies.
