Fig Preserves
Fig Preserves is an easy dinner. Made with 6 lb. figs (after sorting), 4 1/2 lb. sugar, rind and juice of 1 lemon and soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Sort figs to use those of even ripeness.
Sprinkle soda over figs.
Cover with boiling water and let stand about 15 minutes. Drain and rinse well, the last time, in warm water.
Dissolve sugar in cup of water.
Add figs and lemon and cook slowly (simmer), partly covered (wipe moisture from lid) until clear.
Resterilize jars.
Process 20 minutes in hot water.
