Fettucine And Veggies is an moderately easy dinner. Made with 1 c. sliced mushrooms, 1 clove garlic, minced, 4 tsp. diet margarine, 1 c. cooked broccoli, zucchini or asparagus and 1/4 c. part-skim ricotta cheese, this recipe delivers authentic, satisfying flavors. Saute mushrooms and garlic in margarine.
Stir in vegetables of your choice.
Set aside.
In blender, blend egg and Ricotta cheese. Add milk and Parmesan cheese.
Blend well.
Add egg mixture to vegetable mixture.
Simmer 2 minutes.
Toss with cooked fettucine. Sprinkle with parsley.
Serves 4.
