Farmer'S Breakfast(We Use For Saturday Night Supper) is an moderately easy dinner. Made with 6 to 8 medium new potatoes, 3 to 4 strips bacon, 2 small to medium onions, black pepper and 14 1/2 oz. can tomatoes, drained, this recipe delivers authentic, satisfying flavors. Boil potatoes until done.
Brown bacon and remove.
Save about 2 tablespoons grease in skillet.
Cut up potatoes and onion; add black pepper and brown in grease.
Add drained tomatoes and eggs and a little more black pepper.
Cover and cook until set.
May need to cook some with lid off.
