Farmer's Breakfast
Farmer'S Breakfast is an moderately easy dinner. Made with 6 slices bacon, 1/2 c. green pepper, diced, 1/4 c. onion, diced, 3 large potatoes, boiled, peeled and cubed and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Fry bacon; cut in small strips.
Save 3 tablespoons of grease in skillet.
Place green peppers and onion in skillet.
Place potatoes in skillet; sprinkle with salt and pepper.
Fry until golden brown, stirring often.
Sprinkle with grated cheese.
Break 6 eggs over potatoes in pan and cook at low heat until eggs are set.
Stir constantly.
Serves 6.
