Fannie's Coconut Pie
Fannie'S Coconut Pie is an moderately easy dinner. Made with 4 eggs, 1 c. sugar, 3 tbsp. flour, 1/2 tsp. salt and 1/4 lb. margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 425°.
Separate eggs.
Beat egg yolks; add sugar, flour, vanilla, salt and vinegar.
Pour milk into saucepan. Add coconut and margarine.
Heat on medium until margarine melts. Cool slightly until pouring into beaten mixture.
Pour into unbaked pie shell.
Bake 10 minutes at 425°.
Reduce heat to 350°. Bake 30 minutes until firm.
Top with meringue and bake until golden brown.
