Falafel
Falafel is an moderately easy dinner. Made with 3 c. cooked garbanzo beans, 1/4 c. liquid from beans, 1/4 c. wheat germ, 1 small onion, finely chopped and 2 cloves garlic, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Place beans and liquid in blender and purée.
Put in bowl; add all ingredients except 3/4 cup wheat germ.
Roll into 1 1/2-inch balls.
Add enough wheat germ so balls will hold together.
Bake at 400° for about 15 minutes (place on cookie sheet).
Serve in heated pita bread (2 or 3 balls) with lettuce, tomato, alfalfa sprouts and tahini dressing.
Makes 20 to 24 balls.
