English Muffin Loaves
English Muffin Loaves is an moderately easy dinner. Made with 6 c. flour, 2 pkg. active dry yeast, 1 tbsp. sugar, 2 tsp. salt and 1/4 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine 3 cups flour, yeast, sugar, salt and baking soda. Heat liquids until very warm (120° to 130°).
Add to dry mixture; beat well.
Stir in enough additional flour to make a stiff batter.
Spoon into two 8 1/2 x 4 1/2-inch pans that have been greased and sprinkled with corn meal.
Cover; let rise in warm area for 45 minutes.
Bake at 400° for 25 minutes.
Remove from pans immediately and cool.
Recipe yields 2 loaves, 16 slices per loaf.
To serve, slice and toast.
